Quick and Easy Thai Peanut Sauce Stir Fry

Grocery List

Peanut Sauce
1/3 Cup Peanut Butter
Lime Juice from 2 limes..about 2-3 Tbsp.
2 Tbsp. Soy Sauce
1 Tbsp. Minced Ginger
1/2 tsp. Brown Sugar
1-2 Cloves of Garlic, minced

Stir Fry
1/3 Package of Rice Noodles
1/2 Onion – Sauteed
10-15 Baby Carrots
1/2 Zucchini
1/2 Cucumber
Some Cilantro
Some Broccoli
3-4 Cloves of Garlic, minced
4 Green Onions


1. Sauté the 1/2 onion in some butter. Some people like to take this moment to fry an egg for your stir fry as well. Cook your Rice Noodles according to the package. This generally takes about 7-8 minutes.

2. Soften the peanut butter in the microwave for like 30 seconds, then whisk in all of the Peanut Sauce Ingredients into a bowl.

3.Toss the rest (carrots, zucchini, cucumber, cilantro, etc.) either in your big Sauté pan or in a wok. This does not matter. If you are a guy, be smart and don’t make more dishes for yourself. We all know they are just going to sit there for at least a week 🙂 Cook those down with a Tbsp. or two of olive oil if needed for 2-3 minutes.

4. Toss in your noodles and then toss in the peanut sauce and stir for a minute or so. Eat!

**Keep in mind if you are not a mega fan of garlic, this can be taken down a notch. This recipe is for people that like to stink. I also like to use the organic peanut butter that has nuts in it. It’s healthier for you (take a moment to read about how bad peanut butter is for you), gives a more authentic peanut taste, and is more expensive. You can also add any type of veggie or take any of those out. Does not matter 🙂
